Raul Moreno Retahila

La Retahíla resurrects Perruno, a pre-phylloxera Jerez variety almost driven to extinction, here sourced from a rare surviving centenarian vineyard in Trebujena. Whole, unstemmed grapes are foot-trodden and macerated for three weeks with twice-daily hand pigeage, fermented with native yeasts, pressed and rested in old chestnut amontillado barrels and cement vats, developing a veil of flor. A rare, characterful expression of an almost-lost grape and a near-extinct style of unfortified Jerez wine.
