El Propósito comes from a centenary Palomino Fino vineyard (the rare clone 84, trained as goblet/bush vines), aged biologically under flor in the manner of fino sherry but bottled unfortified, as a 'vino de pasto'. Deep and saline, with the distinctive nutty, briny complexity that comes from extended ageing under a living yeast veil - a precise, minimal-intervention expression of old-vine Palomino from one of the producers redefining what Jerez wine can be.
