Raul Moreno Destellos

Destellos blends Palomino - Jerez's classic grape - with the unusual addition of Portuguese Arinto, foot-crushed and given skin contact before ageing biologically under a veil of flor in amontillado or manzanilla casks. The Palomino comes from very old, ungrafted vines (planted 1945) on albariza soils on the coast at Sanlúcar de Barrameda - among the last vineyards before the beach. Saline, complex and structurally unlike conventional still Palomino, reflecting Raúl's belief that flor-ageing brings a 'Savagnin-like' biological depth to the variety.
