Forlong Amigo Imaginario

El Amigo Imaginario ('the imaginary friend') is Bodega Forlong's signature wine: 100% Palomino Fino from 40-70 year old organically farmed vines on albariza soil in Balbaína Alta, made as if it were a red wine. Hand-harvested with on-vine and table selection, destemmed, fermented with daily punch-downs for around 25 days of skin contact, then aged in sherry casks previously seasoned with old Oloroso, sealed to prevent flor and oxidation, where it also undergoes malolactic fermentation. Amber with golden reflections; tropical fruit, toasted nuts and a chalky, saline minerality from the albariza soil.
