Cume do Avia was founded by brothers Diego and Álvaro Collarte and their cousins, who left city life in Vigo to restore their grandparents' abandoned vineyards at Eira de Mouros in the Ribeiro, planting some 20 native Galician varieties on granodiorite, schist and slate soils. The bottle photographed is Colleita Nº 11 - the eleventh release of their flagship tinto - blending Caíño Tinto, Brancellao, Sousón and Merenzao. Organically grown, spontaneously fermented with native yeasts, macerated in chestnut vats and lightly aged in used chestnut barrels. Cherry-red, with ripe red fruit, balsamic herbs and spice at naturally low alcohol.
