Cherubini farms just beyond the eastern edge of Franciacorta, in a natural park in the Brescia hills, on ancient clay-limestone soils with underground aquifers. No herbicides or pesticides are used, and the winemaking philosophy is minimal intervention both in vineyard and cellar. Sui Generis is a pure Chardonnay, spontaneously fermented in cement for around 20 days, then aged a minimum of 36 months on the lees before disgorgement, topped up with the same wine (no dosage). Pale gold with fine, persistent bubbles; floral and exotic fruit aromatics with mineral undertones, dry, precise and elegant on the palate.
