Alessandro Viola Note di Bianco 25

Alessandro Viola (not to be confused with fellow Alcamo producer Aldo Viola) farms 7 hectares in the Pietra Rinosa district near Alcamo, northwestern Sicily, on clay soils at around 220m. An oenologist by training with experience in Piedmont and on Etna, he developed a subtractive philosophy in the early 2000s, working to remove human intervention rather than add to it. Note di Bianco is his pure Grillo: direct pressing, spontaneous fermentation with native yeasts in steel, six months on the lees, unfined, unfiltered, no added sulphites. Crisp and zesty, with white flower and citrus blossom aromatics.
