Carricat is another of Alessandro Viola's Grillo bottlings, grown organically near Alcamo with the same minimal-intervention philosophy across his estate - spontaneous fermentation, no fining or filtration, no added sulphites. Salty and mineral, with white flowers and yellow fruit on the nose; plenty of acidity and freshness balanced by real depth and texture.
