Xavi Seoane is the mastermind behind one of the most exciting wines projects happening nowadays in Spain, His winery is located in the Ribeira Sacra (Chantada). The grapes are grown in a windy terraced cliff overlooking the Miño where it joins the Sil river. Xavi bets for local ancient varieties which are now almost extinct as Merenzao, Brancellao, Caiño Longo not just the known and well spread Mencia. Most of his wines ferment in Granite Lagar and then aged in Old Oak barrels for a few months.
