'Le nez de Muse' Vezelay Blanc 2019 -Les Faverelles

Located at ASQUINS *Vezelay  a typical little Burgundian village. Their goal is to develop a natural wine with its indigenous yeasts that reflect the expression of each of their parcels of the Vézelien terroir and to respect its birth which results from it without entering the vinification process.

The wines are made from organic grapes, after having been harvested manually, are aged by a real desire to tend as much as possible to the extraction of the soil, to reveal the taste qualities linked to indigenous yeasts, without the addition of enzymes, in order to avoid to strip them of their natural wealth. They are neither filtered nor chaptalised, resulting in so-called Nature wines.

This approach of respecting the plant and the consumer has committed the Domaine des Favrelles to be certified both for the grape and for the vinification, by Ecocert *, a member of the FNIVAB ** charter. 

Certain work in the soil and in the winery (sub-drafting, bottling) respect the flowers, fruits, leaves and root days of biodynamics, especially avoiding the nodes of mercury.
